Vegetable Casserole

1 can shoe peg corn (drain) MAKE SURE IT’S SHOE PEG CORN!!!!
1 can French Style green beans (drain)
1/2 cup chopped celery
1/2 cup grated cheddar cheese
1/2 cup chopped onion
1/2 cup sour cream
1 stick butter
1 stack Ritz
1 small package slivered almonds
Mix together first 6 ingredients – then melt butter and stir in Ritz crackers and place the crackers on top of the casserole ..then sprinkle on VERY top the slivered almonds. COVER with foil. Bake 350 for 35 minutes. Remove foil and continue to bake another 10 mintutes or until crackers are golden brown.

  2. Shoe peg corn is a particular type of corn. Now why it has to be that beats me. Maybe we an ask Aunt Dot or Crystal! 🙂 I am sure she will see this and let us know!

  3. Honestly, I have to hunt for it everytime I go … it’s a harder type of corn so it doesn’t get all mushy in casseroles … it’s on the canned veggie aisle … and it’s in one of those short cans. And I THINK the little green giant company is the one that puts it out … I think
