Chicken Cannelloni w/ Roasted Red Pepper Sauce

This is so good, you will love it!

Ingredients

  • 1 (8-ounce) package cannelloni or manicotti shells
  • 4 cups finely chopped cooked chicken
  • 2 (8-ounce) containers chive-and-onion cream cheese
  • 1 (10-ounce) package frozen chopped spinach, thawed and well drained
  • 1 cup (8 ounces) shredded mozzarella cheese
  • 1/2 cup Italian-seasoned breadcrumbs
  • 3/4 teaspoon garlic salt
  • 1 teaspoon seasoned pepper
  • Roasted Red Bell Pepper Sauce (you can use a jarred sauce for this)
  • Garnish: chopped fresh basil or parsley

Preparation

Cook pasta according to package directions; drain.

Stir together chicken and next 6 ingredients.

Cut pasta shells lengthwise through the other side. Spoon about 1/2 cup chicken mixture into each shell, gently pressing cut sides together. Place, cut sides down, in 2 lightly greased 11- x 7-inch baking dishes. Pour Roasted Red Bell Pepper Sauce evenly over shells.

Bake, covered, at 350° for 25 to 30 minutes or until thoroughly heated. Garnish, if desired.

  2. For quick weeknight solutions, prepare and stuff cannelloni shells. Wrap tightly with wax paper; freeze until ready to serve. Let thaw in the refrigerator. Unwrap and place in a baking dish; top with your favorite supermarket pasta sauce, and bake as directed.

    There you go!

  3. Thanks– My husband won’t touch cheese with a 10-foot pole, let alone eat the stuff so I always end up with lots of leftovers that go to waste if I can’t freeze what I’m not going to eat right away. I will definitely be trying this recipe!

    I had to send you a quick e-mail… You remember the blog were you posted your “World Famous Shrimp and Corn Chowder”, it was almost a year ago now? Well Drew loves it but I’m not a big seafood person so I’ve only made it a couple of times, so anyway a few weeks ago he started new job and came home and told me that I HAD to make this stuff for the companies annual Cook-Off so this morning I got up at 5:30 to make it for him and to make a long story short it won first place!!! He sent me a text and said I was awesome. It made me feel good because I know it made him feel good and proud for everyone at his new job to think his wife can really cook. I had to give you a shout out since it was your recipe . Oh and one more thing I thought I’d share… my brother Nick is away at boot camp, he’s been gone for a little over a month now and he wrote me a letter and said he’s been going to the church’s on base every Sunday since he got there. Apparently he’s been to at least a Protestant and a Pentecostal and some others but in the letter he said ” there’s no comparison to Freedom House!” I agree!

    Just thought I’d share with you what made me smile today! Love ya bunches!
