Christmas Breakfast Casserole

I make this every Christmas Eve and then on Christmas morning I put it in the oven while we open presents. It is done when we are done opening gifts and then it is time to enjoy. My son asks me every year just to make sure that we are indeed going to have it again. We always do. It is just so easy for us to do on Christmas morning that way we can just spend time together and not be in the kitchen.

1 lb hot sausage (it provides better flavor if you use the hot kind, don’t skimp)

1 C cheese flavored croutons

2 C shredded cheddar

3/4 C sour cream

1/2 C cream of mushroom soup

1 tbsp Dijon mustard

8 eggs

paprika

Brown sausage and drain. Cover bottom of a buttered casserole dish with crumbled croûtons and cover with one cup of cheese. Combine SC, soup, mustard and pour half of it over cheese and croûtons. Spread sausage over that. Make 8 indentations in the sausage mixture and then carefully pour one scrambled egg in each hole (raw). Pour rest of SC mixture over eggs and then the last cup of cheese. Sprinkle with paprika. Bake at 325 until golden brown and bubbly. Approx 25 minutes. (Now if you do like me and it comes from the frig, it will take longer to cook because it was cold)

Great served with salsa.
